Contrary to popular belief; having fancy coffee every day as a way to avoid being absolutely crushed by a diet is not actually sustainable. But I have found how to make it on my own (with the help of the fancy Jura c offee machine at the office)
Though I know it contains cold brew concentrate (taken from an estranged bottle in a fridge) I couldn’t find what kind of milk they use or if they added any syrup to the coffee.
Leaning over the counter a bit too much revealed that they used this soy milk in the making of the coffee.
The cool thing about it is that according to the manufacturer’s website it doesn’t actually contain any sugar.
It’s specially made for “baristas” so even though I scoured around Mexico City’s impersonations of Whole Foods for hours, I didn’t actually find it. But I will get it one day.
Otherwise, leaning over the counter also revealed that they froth 1/4th of the serving of milk and place it at the top of the glass. Soy milk d0esn’t stay frothy for long, but by only frothing 1/4 of the serving they don’t actually lose significant
volume

leave the customer with a deflated serving of milk.) and the texture is still that of regular milk.

There are barista editions of oatmilk that may be easier to get.

Oatmilk and Almond milk are
easier to get... I did try Almond but I didn’t like it as much as soy. I’m yet to try oat
milk.

I had a now retired co-worker who lived in Miami for a number of years. She made a proper Cuban coffee one day, and I'm not sure my stomach lining has been the same since. It was certainly intense.

While not exactly the same, the day I figured out how to make a 95% replica of my favorite Pizza from my favorite place at home was pretty glorious. I wish you nothing but success in this endeavor.

O atmilk can be good (try Oatly) , but if it gets to normal frothing temperature it tastes like oatmeal. It’ll hold a nice foam at a lower temp. Good hemp milk is my personal preference, I recommend trying some. My partner loves coconut milk, but it’s not for me.

You need to be careful about soy milk if you’re on a diet - it’s really high fat. Makes a damn fine latte though. And an even better hot chocolate .

That’s a really good point. To be fair my nutritionist did tell me I could have coffee with soy milk, but I should probably be more careful about it.

Not a fan of coconut, but yeah, oatmilk approximates the texture of cream the best.

Have you tried hemp milk?
I mean, granted I’m in the U.K. but we have hemp milk and barista hemp milk made for coffees, lattes, etc... .

then enjoy full fat milk
